The canteen on the PIND premises was designed to provide a quiet outdoor space where staff could come to enjoy the newly planted garden, as well as a kitchen for community caterers to prepare food for training events.
The building is designed to provide shelter from sun and rain, while allowing for plenty of natural ventilation. The kitchen design incorporates a solar chimney to draw cool air through the kitchen, and minimise the build up of fumes and smells from cooking.
As part of the canteen development, we worked with the team at Biotec Development Network to design and install a biodigester, which took all the organic waste from the canteen kitchens, and the sewage from the toilets at the ATED Centre. This was processed to provide biogas, a clean and safe cooking fuel for use in the canteen, and resulting slurry was rendered safe for use as compost around the new garden.
